Our signature dish

We get our 21-30 day dry-aged loins from Longcroft & Old in Smithfield Market. 10-12 kilos in weight they often come into the restaurant on the shoulders of white-coated meat market butchers, and sometimes we carry them ourselves. They take up to one hour to prepare for each loin and we get up to 12 T-bones per cut. We chalk up as many as we can prepare on the blackboard every day, but when they are gone, they are gone. Many people ask why we don’t prepare more, but the simple answer is that we offer as many as we are able to every day. Sometimes they are all gone by 7:30pm, sometimes we don’t sell out. We can never predict demand. We are often asked if they can be reserved in advance, but we feel that it is not fair to the specialness and appeal of these amazing steaks to sell them in advance.
